I’ve already confessed that I really don’t like to cook. Well, it isn’t exactly that I don’t like the actual function of cooking, but I almost always have other things I would rather be doing. But as it turns out, I do have to figure out how to feed my family once in a while, so I sometimes look for quick and easy ideas that will keep everyone here happy. This past weekend we had Grandma and Grandpa here for a few days, and I really did need to turn my attention to FOOD for a little while at least, and so I started looking for some new ways to do things that I’ve done for about a bazillion years – it gets boring actually after that long!
As I was searching for something (anything! HELP!) I came across several different versions of White Chicken Chili. Of course, I’ve made White Chicken Chili before, and since I rarely follow a recipe exactly, I’ve made it several different ways. So here is what I came up with, along with some other versions in case you want to try it out for your family. It really is quite budget-friendly, easy and quick, and my family loved it (even Grandma and Grandpa!)
- 1 large can of shredded chicken in broth
- 1 large jar of Great Northern Beans
- 1 box of chicken broth
- 1 cup chopped celery
- 1 cup chopped onion
- Salt, pepper, garlic to taste
- Chili powder (optional)
- Shredded Cheese
- Sour Cream
In the slow cooker, sautee the chopped celery and onion until soft. Add the shredded chicken, beans, chicken broth, and seasonings as desired. Cook on medium high for a couple of hours, stir in sour cream (to make it creamy, or not if you just want it with a plain broth base), and top with shredded cheese. That’s it! We had a salad and corn muffins with our chicken chili, and I was able to feed my family and take the kids mini-golfing all in the same day!
