This might not seem like a big deal to most people, but around our house, coming up with a quick, easy, and inexpensive recipe that my family loves is a significant accomplishment. That’s mostly because I don’t really like to spend a lot of time cooking (I’ve done that for so many years, that now I have a lot of other stuff I would rather do than cook and eat!), but it is also because we have been looking for supper ideas that the girls can help with. Annie found a recipe the other day for Baked Chicken Bacon Ranch Taquitos from Six Sisters’ Stuff and asked if we could try it. Of course, I said, “Yes! Let’s try it tonight for supper.” And so we did.
We already had some chicken that I cooked to have on hand for just this kind of recipe. We also had bacon in the fridge, so that was all we had to cook. Since we also had all the other ingredients, it was a pretty quick and easy meal. While the bacon was cooking, we mixed up all the other ingredients for the filling. When the bacon was finished and cooled a bit, we crumbled it up into the cream cheese filling and then it was a rather fun project to fill up the tortillas and roll them up!
I sprayed them with a bit of butter-flavor baking spray and popped them in the oven for about 20 minutes. They got just a bit crispy on the outside and the filling inside was just “melty” enough to be yummy.
Ours actually ended up being more like “wraps” than “taquitos” but that was OK . . . they were really good! The girls loved them and since we had a couple of the wraps left over, they got to take them in their lunch to school the next day. They reported that our newest favorite food was even good cold. That was definitely a win-win for this mama! I also found the recipe for Chicken Bacon Wraps over on the Old El Paso website. Both recipes are very similar (and of course, we “tweaked” ours a bit to fit our family and ingredients on hand), so either way you make them, they are a great family supper idea.
With some salsa, a salad, and some fresh fruit, these Chicken Bacon Ranch Wraps will be a regular item on our family menu in the coming weeks and months.
